Pumpkin Pie Oatmeal

Pumpkin Pie Oatmeal

Yield: 2 Servings

1 cup water
1 cup milk
1 cup old- fashioned oats
1/2 cup canned pumpkin
1/2-1 tsp. pumpkin pie spice
2 Tbsp, brown sugar
1/2 tsp. vanilla extract
cinnamon (optional)
Pecans (optional)
Additional milk (optional)
Maple syrup (optional)

In a medium saucepan, combine the water, milk, oats, pumpkin and pumpkin pie spice. Bring to a boil. Cook and stir for 5 minutes. Remove from the heat and add the brown sugar and vanilla. If desired, sprinkle with cinnamon and pecans. Serve if desired, with additional milk and maple syrup.
